Does a wife of a returning israeli have to be jewish to be entitled to become a citizen? If she is Jewish, is it only because of the law of return that she's so entitled or does the fact that her husband is israeli play any role in her entitlement?

No, but

she doesn't have to be jewish but she will not get citizenship automatically, it will take something like 3-5 years until she does. if she is jewish than the law of return applies to her and it doesn't matter if her husband is Israeli.
